Mata kuliah ini sebaiknya dirancang untuk memberikan pemahaman komprehensif tentang pengelolaan produk makanan di industri perhotelan, mulai dari perencanaan, produksi, hingga penyajian. Berikut adalah beberapa aspek utama yang sebaiknya diajarkan:<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Perencanaan Menu (Menu Planning &amp; Engineering)<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Mahasiswa perlu memahami prinsip perencanaan menu, termasuk:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Analisis target pasar<\/strong> (preferensi tamu, tren kuliner, dan kebutuhan diet khusus).<\/li>\n\n\n\n<li><strong>Menu engineering<\/strong> (strategi pricing, food cost analysis, dan profitabilitas).<\/li>\n\n\n\n<li><strong>Penyusunan menu yang seimbang<\/strong> (nutrisi, estetika, dan kesesuaian dengan konsep restoran hotel).<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Manajemen Biaya dan Pengendalian Food Cost<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Pemahaman cost control sangat krusial dalam operasional F&amp;B hotel.
